Sweet, tangy, and full of comforting flavour, this Apple Chutney Chicken combines juicy, tender chicken with a rich glaze of apple chutney, honey, and fresh lemon juice. Served with a lightly spiced homemade apple chutney infused with cumin, coriander, fennel, and a hint of chilli, this dish delivers the perfect balance of sweetness and warmth in every bite. Ideal for a delicious family dinner or effortless entertaining.
Ingredients
Chutney:
- 2 Pink Lady or Granny Smith apples, halved and cored, but unpeeled
- 1 tsp honey
- ½ tsp ground cumin
- ½ tsp ground coriander
- ¼ tsp ground fennel
- ¼ tsp chilli/peppadew powder
- Black pepper to taste
- ½ tsp salt
Chicken:
- 8 Supreme chicken drumsticks or thighs 1kg wings or 1kg strips)
- 1 cup of apple chutney
- 2 tbsp avocado oil
- 2 tbsp honey
- 1 tbsp lemon juice
- Salt to taste
Cooking Instructions
• Preheat oven to 180°C and season chicken with salt and pepper.
• Heat olive oil in a cast iron pot or a casserole dish over medium heat. Brown chicken, skin-side down, for about 10 minutes until skin is crisp, then remove and set aside. Brown in batches, if needed.
• Discard excess oil, keeping crusty bits. Return chicken to pot with remaining ingredients and give it a stir.
• Cover and bake for 1 hour 30 minutes. The lemon juice will thicken the sauce.
• Garnish with coriander.
Serve with bread, rice, noodles or potatoes and a side of peas or greens.
