Cooking Instructions

  • Slice the chicken into bite-size pieces and place them in a medium bowl with olive oil, spices and salt.
  • In a large, deep pot, heat extra olive oil over medium-high heat. Sear the chicken pieces until browned on both sides.
  • Remove the chicken from the pot and set aside.
  • In the same pot, melt butter over medium heat. Add onion, garlic and ginger. Cook until the onion is translucent and aromatic. Add the remaining spices and cook until fragrant and the mixture becomes dry and toasted.
  • Pour in the tomato puree, mix chicken stock with half a cup of water, stir to combine. Allow the mixture to simmer.
  • Return the seared chicken to the pot. Reduce the heat to medium-low and simmer for 10-15 minutes, or until the chicken is tender and cooked through.
  • Pour in the cream, stirring gently to incorporate. Season with salt, pepper, and a pinch of sugar to balance the flavours.
