• Heat oil in a cast iron potjie (no 3)over medium heat. Brown the chicken pieces in batches until golden. Season with salt and pepper as you go. Remove the browned chicken and set aside.

• In the same potjie, sauté the onion until soft and translucent. Add garlic, ginger and curry powder. Cook for another minute until fragrant.

• Return the browned chicken pieces to the potjie. Add water to the pot, enough to cover the chicken.

• Cover the potjie with its lid and let it simmer over moderate coals or on the stove over medium-low heat for about 40 minutes, or until the chicken is tender.

• Add the potatoes, chakalaka, and crumbled chicken stock cube to the potjie. Stir gently to combine.

• Cover again and simmer for another 45 minutes, or until the chicken is fully cooked, the potatoes are tender and the sauce has thickened to your liking.

• Season to taste with salt and pepper if needed.

Serve hot, accompanied with rice. Enjoy your hearty potjie!
