Chicken Feet Casserole

A slow-cooked, homestyle casserole featuring tender chicken feet simmered in a savory sauce with onions, tomatoes, and warming spices. The long cooking time creates a rich, gelatinous texture and deep, comforting flavor
Ingredients:
- 1-2 kg Supreme chicken feet
- 2 tbsp canola seed or coconut oil
- 1 onion, finely diced
- 2 tsp garlic & ginger mix
- 2 chillies
- 1 tbsp chicken spice
- 1 tbsp Six Gun spice
- 1 tomato, grated
- 1 tsp all-in-one spice
- 2 cups hot water
- 1-2 potatoes, peeled and cubed
- 2 cups frozen mixed vegetables
- 1 tbsp instant chicken soup (dissolved in 1 cup water)
- Coriander for garnish
Cooking Instructions
• Heat oil in a saucepan over high heat and brown the chicken feet. Remove and set aside.
• Reduce to medium heat, add onion, garlic & ginger, chillies, spices and tomato. Sauté until softened.
• Return the chicken feet to the pan and add the all-in-one spice, hot water, potatoes and mixed veg. Bring to the boil and simmer on medium to low heat for 10 minutes.
• Stir in the chicken soup mixture and simmer on low heat, stirring frequently, for 15 minutes or until chicken and potatoes arecompletely cooked.
Serve with pap, garnished with coriander.
