Harissa Honey-Grilled Chicken Pitas

This vibrant, flavor-packed pita is perfect for a quick weeknight dinner or a relaxed weekend braai-style feast.
Ingredients
Chicken Marinade:
- 500g Supreme boneless, skinless chicken thighs, diced
- 3 tbsp harissa paste
- 2 tbsp honey
- Juice of 1 lemon
- 6 garlic cloves, minced
- 2 tbsp olive oil
- ⅓ tsp salt
- 4 medium pita breads
Filling:
- Lettuce
- Onions
- Tomatoes
- Cucumber
- Optional: peppadews, jalapeños, cheese
Cooking Instructions
• Preheat oven to 250°C and line an oven tray with baking paper (or use a baking dish). In a mixing bowl, combine harissa paste, honey, lemon juice, garlic, olive oil and salt. Mix until it forms a paste. Add diced chicken to the bowl and toss untilevenly coated with the marinade.
• Arrange the chicken in a single layer on the lined tray, and bake for 20 minutes or until the chicken is cooked through and nicely charred around the edges.
• To assemble the pitas, warm them first and then fill each pita with the chicken mixture and your fillings of choice.
