Succulent chicken livers sautéed in a vibrant peri-peri sauce with garlic, onions, and spices. This dish is rich, slightly spicy, and full of flavor, perfect served with fresh bread or pap for a comforting and hearty meal.
Cooking Instructions
- 500g Supreme chicken livers
- 1 cup milk
- 1 onion, diced
- 2 green chillies, chopped
- 1 tsp garlic-and-chilli paste
- 1 tsp Six Gun spice
- Soy sauce to taste
- Juice of 1 small lemon
- Peri-peri sauce
- Salt to taste
Ingredients:
• Place the livers into a bowl and cover with milk. Allow to rest in the fridge overnight.
• The next day, discard the milk and rinse the livers with water until clean.
• Heat oil in a pan over low heat. Add onion, chillies and garlic-and-chilli paste and sauté until the onions are browned.
• Gradually add spices and soy sauce, stirring continuously.
• Lower the heat and carefully add the livers to the pan one by one.
• Once the livers start to brown, add lemon juice and continue cooking until they are evenly browned
• Stir in peri-peri sauce and simmer on low heat for a few minutes more until livers are fully cooked through. Taste for salt.
• Remove from heat and serve immediately. This dish pairs wonderfully with freshly made roti.
